KATSUO (Straight)
Sharpness determines the quality of a bonito shaver. To smoothly shave dried bonito, which can be as hard as wood, sharp blades are essential. Kakuri uses the highest quality steel, professionally called aogami (blue paper). The blade steel is shaped and repeatedly applied with processes that increase the hardiness and durability. They are then polished in three stages: rough polishing, middle polishing and finishing polishing.
With the KATSUO shaver, you can make bonito flakes with a comfortable feeling for your hands and pleasant sounds to your ears. The aroma of the freshly shaved bonito flakes makes a perfect compliment for hot, cooked rice.
