We were looking back to traditional Japanese food culture, and have developed a new type of dried bonito shaver to dispatch to the world.
Sharpness of blade is essential in a good quality dried bonito shaver. Dried bonito looks like a hard wood and needs a sharp blade to shave smoothly. Kakuri Seisakusho use top quality blades called ‘Aogami’. After shaping the blade, craftsmen process it to make it stronger and stickier, and then use a process of rough polishing, medium polishing and apply a final finish. A skilled craftsman who does the important final polish has 63 years experience and is a renowned expert in Sanjo city.
